For me it's Apóstolo in Santiago de Compostela. Great fiesta that lasts two weeks. Of course main part is on St. Jacob's Day, but there are many concerts, exhibitions, shows starting from (if I remember well) 14 July. As I said main part starts on St. Jacob's Day and it starts with great fireworks and with 'burning' of cathedral's faí§ade. Although this fiesta is connected with Christian saint, this is surely not only for Christians. There are always many things to see (xigantes y cabezudos, gaiteros, parades of people dressed in traditional clothes) and hear (traditional music, but also Spanish and World stars).

Other thing is that in summer there fiestas probably in every town in Spain. I remember special newspaper with fiestas' advertisements. And those smaller, not so famous fiestas are also fab and worth visiting.

In July, I would love to participate in one of the sea processions in honour of Our Lady of El Carmen in a typical fishermen town in the Canary Islands, Galicia or the Basque Country.

I would also love to revisit Cambados during the Albariño festival. Awesome sea-food and wine.

That poor Casteller kid with the uncomfortable-looking helmet on. Come on, this is breaking centuries of tradition!

As to which fiesta I'd like to attend: all of them! The beauty of the fiesta is that each village and barrio (let alone each autonomous region) has its own distinct celebration. I'd love to attend a dozen different ones each year - I think I'd learn more about Spain in twelve nights than in twelve months.
