Definitely Chinchon!
I'm working on a panorama pic of the Plaza right now-

We visited Chinchon in 2007. Have you been to see the panaderia right off the plaza? It's really cool.
I've been carrying around a piece of star anis for the last week to help bring me back to the place. Anise has become of of my Spain associations because of Chinchon.

Cheers!

That's Chinchón. It's famous for its rounded and green balconied Plaza Mayor, which doubles as a bullring during the fiesta. Goya spent time painting here and Orson Welles filmed scenes from Chimes at Midnight and The Immortal Story in the town. Word has it that Welles liked to have his anis shots (something else Chinchón is famous for) in the morning with the locals, and enjoyed the food and the bullfights.

Definitely looks like a Castilian town. As mentioned above it could be Chinchon. I had thought Segovia at first, but since I can't see an aqueduct I suppose I'll stick with the home of anis.
