Maybe this comes a little bit late for this year Reyes but following Keith's request in the blog here is the recipe:
Ingredients for 8 people:
- 1/2Kg Flour
- 125gr Sugar
- 125gr Butter (at room temperature)
- 12gr Yeast
- 5 Eggs
- 1 pinch of salt
- The peel of 1 Lemon grounded
- The peel of 1 Orange grounded
- 1/4l of Milk
- Preserved fruits (I'm not very sure this is the name in English, in Spanish it is frutas confitadas) Like cherries, lemon and orange.
Preparation
Step 1 - Dissolve the yeast in warm milk, after that add 175gr of flour and a pinch of salt and proceed to knead the mixture with your hands until the dough is properly mixed. Then form a ball and put it in a bowl covered with a tea towel in a warm area, and wait for 1 hour before continuing so the dough grows (it has to double its size).
Step 2 - In another bowl put the rest of the flour (325gr), the sugar, the butter, 4 eggs (keep one for painting the top later) and the lemon and orange grind. Knead it all (I would personally use a mixer if eggs are involved) and then knead it with your hands together with the dough from step 1.
Form a ball with the dough and paint it with oil so it does not dry. Put it again in a bowl covered with a tea towel and leave it to rest in a warm area for 3 hours (it has to double its size again)
Step 3 - Shape the dough into a roscon shape ( like a big doughnut) and place it in an oven tray that has been previously greased with butter. Again cover it with a tea towel and set it to rest for 1 more hour (this time it should nearly double its size).
Step 4 - Beat the egg and proceed to paint the top of the roscón and then, place the pieces of preserved fruit on the top separated by 2 cm. Introduce the tray in a preheated oven at 180ºC for 45 min. It the top part gets toasted at the right at the beginning, turn off the grill until a few minutes before the end of the cooking time.
Step 5 - You should very carefully introduce a little surprise from the bottom part. The person that gets the surprise should pay for the following year ROSCON!!!
