Need information about the Provinces of Valencia & Castellon

Hola a todos!

Apologies for not writing in Spanish but it would take me way too long!

I'm planning a short trip to "la Comunidad Valenciana" in May but don't know much about the areas away from the normal tourist routes.

Is there anyone out there that can tell me what they think of these 2 Provinces, their favourite towns, the best "campo", places to avoid etc. FYI, my husband and I like walking, greenery, mountains and vistas preciosas!

Any help would be appreciated

Valencia region website (http://www.comunitatvalenciana.com/index.htm?idioma_sess=3)(English) may be of use.
There is also one for Castellón (http://www.castellon-costaazahar.com/en/default.htm)but so far it's only in Spanish - despite the menu options!

Thanks Greytop - the Castellón site will be good practice for my limited Spanish skills!
