View Full Version : Scrambled Eggs & Blood Sausage

I had a lovely dish in Salamanca last week. It appeared to be scrambled eggs with blood sausage and raisins. Does anyone have a recipe or hints on how I might prepare this myself? Does it have a name? It was really delicious, and seemed like something I could actually make myself. I did a quick internet search of my usual recipe sites and couldn't find it.

Shallow Fry:
Cut the Clonakilty Black & White Pudding approximately ½ inch thick - the outer skin can be left on the product during cooking
Place a tiny amount of oil in the pan and heat to full heat.
Reduce heat to medium and place the Clonakilty Black and White Pudding in the pan.
Cook until crisp on both sides, turning occasionally.

This looks okay but it would need bacon, sausage tomatoes and a fried egg to qualify as a Full English breskfast...

Yes, I think this is it. The dish I ordered had more egg and less sausage, but it looked more or less like this. Doesn't sound too complicated; I think I'll try it this weekend, assuming I can find decent blood sausage in Cincinnati.

This blood sausage looks a bit like Spanish morcilla. It's the only ingredient which actually looks appealing to me, but I would never eat this for breakfast! It would go down well after a hard day's work with red cabbage, raisins and apple sauce. :)
