Marina, do you know of savoury dishes with chocolate sauce. I heard about 'las migas', an Extremaduran dish of meats, which can be served with chocolate sauce. It sounds worth trying. Do you know about this or other dishes like it?

I've heard about them... but to tell you the truth I don't like chocolate (wierd I know), so I've never been curious to try them.

I think in Mexican food that combination is more common than in Spanish food: For example beans (frijoles) with chocolate.

My grandmother makes a meat with a sauce called "cazadora" which has two pieces of dark chocolate melted among carrots onions and other vegetables.

The chocolate can be used as a condiment, it gives a nice color and a slightly bitter taste. When you put chocolate in the main dishes it doesn't have to have a taste like a chocolate cake. I love cooking with chocolate :)

I was advised to try this with chilli con carne as it enriches the sauce. Two words of advice:
1. Use dark cooking chocolate type (70%+) rather than milk chocolate
2. Start with a little as it is quite a strong taste to add to a dish

Needless to say I did neither and the first attempt was a disaster!!:blush:
I don't think it really adds a lot to an already spicy dish but could see how it may improve a stew.

frijoles con chocolate- i've heard of it, but haven't had the opportunity to try it.

There is of course, Mole (Mo-lay) poblano, (It's actually a lot like Indian Korma...) Pollo en mole & enchiladas con mole are very popular Mexican dishes - but the sauce was actually created especially for turkey!
(mole poblano de guajolote)

The chocolate used is un-sweetened (baker's chocolate) and works to blend and mellow the chiles and other spices of the sauce.

Again - mole is something my ex mother-in- law used to make with regularity. Her mole also had peanut butter in it.

While some mole can be very tasty, overall the dish has never been a favorite of mine.

I'd be interested in hearing more about using chocolate in Spanish cuisine, though. "cazadora" sounds interesing!
