The name comes from the Arabic (http://en.wikipedia.org/wiki/Arabic) word "saďm", which means pork lard.
Would it be possible to make ensaimadas without pork lard? With butter, for instance?

No, I am, but I don't eat too many pork products, just jamón ibérico once in a while.

Probably an excellent practice. It's hilarious, because the pork farmers here have had a marketing/advertising scheme for pork, billing it as "The other white meat." I haven't figured out what exactly they're trying to say, unless they're implying that pork is actually good for you.
In small doses, though, I like pork. Especially in embutidos and bacon. :D
