Do you know what the marisco tapas situation is in Valencia? Can one still get tapas by ordering a drink at the bar in Valencia or is that really only found in smaller towns these days?

This probably isn't very helpful, but I don't know the first thing about mariscos. The most exotic shellfish dish I've ever made is mussels in a white wine sauce. And even then, it was a matter of cooking the mussels, making the white wine sauce and mixing the two shortly before serving. I'd like some basic tips on how to decide on how fresh the mariscos are and some ideas on how to prepare them. ¡Gracias!
