My father is curing 2 pork legs for jamon Iberico. They've been curing since November. The plan is to try them next November, after they've been curing for 1 year. He also did a lomo the same way. I can't wait!

Have any of you tried your hand at making jamon iberico? Any suggestions?

Haven't tried it myself, but there's no doubt that's delicious stuff! :)

I order all my chorizo and jamon from latienda.com. It's a bit pricy, but they have pretty fast delivery, and it comes in a refrigerated box to keep it from heating in the delivery process.

I've ordered sobrasada and magdalenas from la tienda.com I'm thinking about taking a trip to the store itself. It's only a couple of hours from me. They do have good stock but I agree, they are pricey.


I found jamon serrano at Trader Joe's. Do you go there?

I haven't been there, no. Looks like the closest one to me is 3 hours away in Indianapolis.

I love jamón ibérico, but I never tried to cure one myself... living in a flat there are a few things that are not easy to do, and certainly this is one of them. Hope your dad's hams are good.... please if you remember let us know in November!!!

I will certaintly keep everyone posted on the jamon status. I'll try to grab some pictures and post them here.

Actually, my father has done this before and his best ham was cured in an apartment (flat) in New York city which happened to have the right conditions.

My father says that he got his method for making jamon iberico from a town in Granada called Caniles. My father adds that Caniles has some of the best jamon in Spain.

Has anyone been there?

Paging Ben and Marina? Sounds like a possible pod cast trip::).
